Sitting in a slightly uncomfortable bar stool in a New Mexico brewpub on New Year's Eve 2005, Scott decided his hometown of San Antonio needed a place that specialized in off the wall brews, artisan pizza and an independent spirit. It took almost three years, but Freetail Brewing Co. finally opened in November 2008. Armed with a fiercely wacky staff and a brewing team willing to follow Scott's "brewers must have beards" rule, Freetail is pushing the beer boundaries in South Texas right out of the gate. Scott also serves on the Brewers Association Finance Committee and, while no one is looking, teaches economics at the University of Texas at San Antonio.
Gary is without question the single greatest human being on the planet. In addition to making the best pizza in San Antonio, he spends his spare time saving kittens from trees, nursing homeless sea turtles to health and building rocket ships. He is not a man to be reckoned with.
Jason Davis - Brewer Jason has a beard, and that is probably his best virtue. It is rumored that shaving would cause him to lose all of his brewing powers. He once thought about shaving, and accidently brewed an American Light Lager as a result. Fortunately, strict rules against such facial maintenance hath been forbade by the dark forces that lead Freetail. Jason started out as a dishwasher at Waterloo Brewing Co. in Austin, TX and eventually grew into a brewing role. Additionally, he’s been a brewer at Celis, The Laboratory and Blue Star. He aspires to one day have an entire wardrobe full of guayaberas.
John Lee - Assistant Brewer/Caretaker of Precious Fluids John Lee is responsible for loving beer, but not in a completely weird and inappropriate way. John’s history is unknown. He’s rumored to have travelled through time and space before mysteriously appearing at the doorsteps of Freetail. His inter-dimensional travels taught him the nuances of glass blowing in addition to brewing – and he’s the creator of our wicked tap handles.
Roy Sauer - Manager Roy Sauer, aka “The Kraut Hammer”, is the object of affection for female Freetail staff members. Roy is a World of Warcraft fanatic, which makes everyone question the judgment of our female staff members.
Ernest is an evil man. He even makes babies cry.
Ashley Levinson - Super Server Ashley is an original Freetail staff member, watching the brewpub rise from a clutter of crated up chairs to what it is today. Displaying unrelenting devotion to her craft, Ashley was once seen dashing across the parking lot battling gale force winds and pounding rain to ensure customers were never left with an empty glass.
Nick Coelho - Bartender, Cook, Dishmaster, Brewing Assistant, Barley Chief, Patio Construction/Deconstruction Supervisor, Battle of Wits #1 Champion, Porterfest 2009 Blue Ribbon Finalist, Sisyphest 2009 Participant, Home Brewer, Mash Tun cleaner, Director of Umbrella Storage, Satisfied Customer, Former Ice-Cream Truck Driver, Lounge Singer. Due to space limitations, we can't tell you anything else about Nick.
Laura Freeman - Server/Mummy Paleontologist Laura brings to Freetail an extensive historical knowledge and practice of the methods of mummification, gained from her life-long commitment to the study of Ancient Egypt. Laura is often seen hobbling the halls of Freetail, due to an injury inflicted upon herself in order to recreate the classic Mummy-hobble. She has also been overheard muttering “only the weak require two feet!”
Byron Mezzetti – Bartender/Cook/Snowboarder/Weirdo What can be said about Byron? He cooks, he snowboards, he listens to Phish, he rarely uses his real voice… On many occasions in the past we’ve considered DNA testing for Byron, but we’ve come to learn that he’s just a weird dude, in a good way.
Devon Busby – Server Devon joined the Freetail crew just in time for our American Birthday Bash in 2009 and has been moving up the ranks ever since. Devon likes to tease Roy by pretending she used to play World of Warcraft, but no one believes her. Devon is admired for her strong will, charming smile and lankiness.
Ali Smith – Server/The Most Famous Person at Freetail Ali also joined us for the American Birthday Bash in 2009 and in addition to having a friendly demeanor, has captured the hearts of Ticket 760 AM listeners by being constantly referred to by Sports Talk San Antonio’s Mike Taylor as “the tattooed chick”. Ali is also the only person Scott’s ever seen come in before 9 am and stay after close on her day off, winning major points with the boss.
