One
First Anniversary Ale
Celebrating the first year of Freetail's existance, One explores the uncharted dark-side of Belgian-style Witbier. Based on an old homebrew by Assistant Brewer John Lee and brewery friend Reimy Roberts, the One uses 4 types of wheat (malted, raw, torrified and roasted) and is spiced with healthy doses of orange peel and corianded and fermented with 100 lbs of native Texas Brush honey from Fein's Honey in Llano, TX. A delightful Black Wit that, to our knowledge, has never been attempted before commercially. Long live Freetail Brewing Co.!

While we have a thriving, growing homebrew community in Texas and here in San Antonio, we realize not everyone knows the difference between a hydrometer and thermometer.
